Olive & Finch leased the 1,879-square-foot space that for- merly housed Snooze A.M. Eat- ery, located at 1701 Wynkoop St., No. 150. The “fine-casual” con- cept offers affordable and acces- sible food that is scratch-made and chef-driven, a statement from the company said. The eatery is expected to open its new space in early 2025. “We couldn’t be more excited about landing at the Union Sta- tion space – it’s the heart and soul of Denver,” said Olive & Finch chef and founder Mary Nguyen. “This place is buzzing with life, from commuters and travelers to people enjoying breakfast, lunch or dinner, grabbing a coffee, or meeting up for a drink. It’s more than just a train station; it’s where the city comes together. That vibe is exactly what drew us in. Olive & Finch is all about good food, gooddrinks, community and con- necting with people, and Union Station is the perfect spot to bring that to life.We’re thrilled to be part of this iconic space and can’t wait to add our own flavor to themix!” Olive & Finch’s Union Sta- tion location will serve breakfast, lunch, happy hour and dinner, offering a more robust selection of grab-and-go options for travelers than other locations. The quick- service restaurant will serve its proprietary line of cold-pressed bottled juices, sandwiches and sal- ads. The restaurant will also have a full craft coffee program, a liquor license, and an emphasis on fresh- baked savory pastries and sweet treats. The Olive & Finch team is plan- ning an “complete transforma- tion”of itsnewspace, reimagining everything from the layout to the design to bring the “unique Olive & Finch brand to life in every detail,” Nguyen said. The partners of City Street Investors, including McHenry, are also prin- cipals in Denver Union Station and manage the development’s third-party tenants. “Denver Union Station is a very special part of downtown Den- ver,”McHenry said. “It’s a unique property in that it's mixed use with hotel, it’s a transit hub, and then we’ve got all the activation with locally owned businesses … We also have a very strong his- tory of performance and tons of traffic.” Snooze is set to move into a larger space at Union Station total- ing 4,325-sf this fall, more than doubling its footprint in the transit hub, according to previous report- ing. There will be no interruption to service during the transition, as the restaurant built out its new space prior to moving out of its original space. Nguyen debuted the first Olive & Finch in the Uptown neighbor- hood in 2013 after noticing a lack of chef-driven, scratch-made casu- al restaurants in Denver. Nguyen opened a second location in Cher- ry Creek in 2017 and a wholesale operation named Olive & Finch on the Fly in 2018. The restaurant has a sister concept, Little Finch, on the 16th Street Mall. Nguyen is currently working on another Olive & Finch location in the Den- ver Performing Arts Center, also set to open in early 2025. Prior to opening Olive & Finch, Nguyen also opened Vietnamese French bistro Parallel Seventeen to wide acclaim in 2005, followed by Street Kitchen in 2011. Local- ly owned Peakview Parker LLC is the landlord of the shopping center.
